Ingredients
1 large ripe South Carolina peach, diced
1 tsp vanilla extract
1½ cups blanched almond flour
2½ tbsp extra virgin coconut oil, melted
2 tbsp maple syrup (or honey, if not vegan)
4 walnut halves, chopped (optional)
Pinch of salt
Instructions
Preheat your oven to 350°F (180°C). Line a small loaf pan with parchment paper for easy removal.
Prepare the peach: Wash, pit, and dice the peach into small cubes.
Make the crust: In a bowl, combine the almond flour, melted coconut oil, maple syrup, vanilla extract, and a pinch of salt. Mix until a crumbly dough forms.
Assemble the bars: Press about two-thirds of the dough into the bottom of the prepared pan to form a crust. Evenly distribute the diced peach over the crust. Crumble the remaining dough over the peach layer. If using, sprinkle chopped walnuts on top
Bake for 10–15 minutes, or until the crumble is golden brown
Cool and serve: Allow the bars to cool before slicing. For enhanced flavor, refrigerate for a few hours before serving.
